The Restaurant

Fuoco Pizzeria is steeped in three generations of Pizzaiolos.  They are very proud of their Napoli heritage as evidenced by the numerous news clippings, jerseys and other fun items that line the entrance hallway from the parking lot.

Once you pass through the hallway you get into a nice and open dining room.  There are spacious booths that line the brick walls and lots of tables in the middle.  There is plenty of space to accommodate large groups as well.

They also have a nice full bar at one end as well as TV’s along the walls showing the current sporting events.

The Ovens

One of the real unique features of Fuoco Pizzeria Napoletana are the ovens.  Fuoco literally means “Fire” in Italian which is perfect for what the custom built ovens need, fire.

The custom ovens were designed by Stefano Ferrara and hand built near Naples Italy using volcanic sand from Mt. Vesuvius.  This specially designed oven can withstand extreme temperatures which is required to make their unique product.

The Pizza

With a special oven comes a very unique pizza creation.  Well at least it is unique to American pizza goers.  At Fuoco they utilize specifications and traditions that have been used for over 200 years in Napoli.

A pizza Napoletana is a true labor of love.  You need lots and lots of time for the leavening process and very little yeast.  They use a very fine double zero flour and San Marzano tomatoes to create their unique flavors.

The special brick ovens cook the pizzas at 1,000 degrees for only 90 seconds creating a airy yet crunch crust.  It also gives the crust a very smoky flavor.

When we visited last we went with two pizza selections.  I opted for the Chicken Pesto Pizza which was pretty incredible.  The chicken sausage was excellent with just the right amount of kick and the pesto held a full flavor.  With the flash cooking, the tomatoes were still firm and juicy.

Karie went with the Funghi e Salsiccia or Mushroom and Italian Sausage pizza. The sausage had a little bite to them and mushrooms were full of flavor.  Every bight had the right amount of mozzarella to round out the flavors.  You can get a sense for the crispiness of the crust in these pictures.  My mouth is watering as I’m writing.

Dolci- Dessert

The pizzas at Fuoco are pretty large and quite filling.  My wife and I generally start with one of the delicious salads like the Rucolina then share a pizza.  It is generally enough for the two of us.

But, if you are still having a little hankering for something sweet, don’t pass up the Dolci’s, or Desserts.

The menu is pretty straight forward with some great Gelato, Tiramasu and a few others.  Our favorite is the Nutella Pizza.

Once you see the Nutella Pizza on the menu it is hard to pass it up.  And for good reason.  It is pretty incredible!

Baked with the same light airy crust and topped with a generous helping of Nutella, bananas, strawberries and nuts, this thing has it all. With every bite you get lots of delicious flavors.

Here is a quick shot of one of the slices.  These things are loaded and heavy.  They are probably low carb, fat free, sugar free and gluten free.  Lol!

Final Thoughts

Karie and I love Fuoco.  We try to get there at least once a month.  We can always count on a great meal with fresh, flavorful ingredients.  One thing we look for in a restaurant is consistency, and they nail it.  The pricing is very good with the pizzas coming in at about an average of $15.

The only negative that I can think of is that parking can be difficult in Fullerton.  But once you find a spot, you are definitely in for a treat.
